This cider was created in collaboration with the Botanical Garden of the Polish Academy of Sciences in Powsin. We used apples from over a dozen varieties sourced from around the world. The result is a cider with a distinct structure &#8211; intensely apple-driven, with high acidity and a noticeable tannic backbone.
