The apples are hand-picked in our old orchard near Warsaw. We experiment with blending different varieties, relying mostly on traditional heirloom cultivars. Our cider is fully natural \u2013 neither filtered nor pasteurized, with no sulfites, no colorants, and no preservatives. It ferments slowly at low temperatures and finally we let it re-ferment in the bottle, so it becomes dry and gently sparkling.
